Kacchi biriyani is one of the most favorite dishes of Bengali people. Call it a wedding, birthday party or any other event, serving kacchi makes the guests happier than ever. Kacchi biriyani is a concoction of meat, potato, rice infused with flavorful and aromatic spices, in layers. Why is it called "Kacchi Biriyani" you ask? Well, the term "kacchi" refers to the raw ingredients that are put in layers and then sealed using flour dough and put on the stove or clay oven. Because of being sealed, the biriyani gets cooked perfectly in its own steam. It takes a really expert chef to cook a perfect kacchi, slight mistakes could lead to a kacchi disaster.
Puran Dhaka is the home of kacchi, you can find at least 3-4 kacchi biriyani houses on each street. But amongst the thousands of Kacchi places, Kolkata Kacchi Ghor has set up its own standards with its high quality kacchi and the meat which comes off on its own without any effort. This kacchi is different than the others because the flavors are all highly detectable, the gravy is super thick and rich, and the mutton is cooked perfectly and is really succulent. The potatoes are a cherry on the top for this dish as they're cooked perfectly and melt in the mouth upon eating.
What I loved the most was that they use premium quality basmati rice, in two layers, one simply cooked and other blended with kesar water. The smell of ghee uplifts the entire dish to a whole new level. Overall, this kacchi is heaven for kacchi lovers and I am highly recommending this particular dish
